Add the leftovers into a salad tomorrow also loving roast veg at the moment. Def anything but boring
You could also use the leftover veg in a breakfast omelette.
Now I'm hungry!!!
Isn't it amazing how a few spices can just change food so much?
I love this recipe I have which is just a few spices and a chicken breast but the flavour is out of this world and makes it SO much more interesting fore exactly the same calories.
Now - what can I eat!

I've found that I'm amazed how much I seem to be eating and managing to lose some pounds. It really shows me that if I just have the willpower to cut out the snacks, coffees and cakes, then the rest of my diet is pretty healthy, fulfilling and sustainable in the long term.
recipe please!
I vary my vggies, so I have no strict recipe for these, lots of mushrooms, red peppers, courgette, onions, cauliflower, add 1/2 tbs oil in way of oil spray, sprinkle various spices and or garlic ( yesterday was Cajun spice, cumin, and smoked paprika π), mix well. Into oven dish, add a little stock, cover, and cook for about 20-25 mins.
Uncover, add the mushrooms, mix well and roast another 25-30 mins, depending on how well roasted you like them.
Sometimes I add one potato or a parsnip, depending on my calories for the day.
Simple but tasty
