This isn’t a healthy recipe- I just used the Blue Dragon Thai Green Curry kit from Tesco (paste, coconut milk and spices)

I added:

•Sugar Snap Peas

•Mushrooms

•Coriander

•Lemon Grass

•Garlic

•1 Tsp Caster Sugar

Altogether for 1 portion 560 calories including the rice! Thought that was quite good! Tasted yummy too.

I think it’s hard to get out of the mindset of saying “it’s not healthy” just because it doesn’t conform to most of these fad diets but yes you are right, it actually is healthy! 😊

I agree it's healthy, but the "fad" diet it doesn't conform to is the NHS Eat Well Guide. I was told by an NHS dietician/nutritionist that I should avoid or limit my intake of coconut milk to a very small amount.

We have all been put on a fad diet for the last 4 decades.

BTW, no need to buy the kits. You can get a big tub of Thai curry paste for a couple of pounds. Just add coconut milk or cream. Lots more varieties too. I've got a tub of jungle curry paste on the go now. 😋

I’m following the NHS diet to an extent but I am also calorie counting through the App Nutricheck. So providing I’m not eating cakes and chocolate all day, the calorie counting is working for me so to have something like a bit of coconut milk in a meal, is nothing really, for me anyway.

The NHS diet (from what I have read) is just making better choices? I don’t think there are any foods that are strictly not to be eaten and if there are I don’t think it would be coconut milk. It’s obviously in moderation and it depends on how it fits into the persons diet.

I normally make the curry from scratch, the only reason I got a kit is because Tesco didn’t have any Thai Green Curry paste on its own so we had to get a kit😊

You and I are referring to two different diets. You mean the NHS 12 week plan, and I was referring to Eat Well Guide, which is what the NHS thinks everyone should eat every day for their entire lives (not something you go on and off).

However, it doesn't make much difference, as they are both low fat, high carb diets that tell you specifically not to eat coconut milk, and other saturated fats.

Eating like they suggest got me obese, and gave several biomarkers for cardiovascular disease. Embracing fat has made me much healthier.

20g per day saturated fat for women, and your curry is 19g/serve, so not allowed.

Thai

Thai food is great as it tends to feature

lots of steamed or stir-fried vegetables.

Thumbs ups: salads, stir-fries, steamed

rice, broth soups.

Thumbs down: coconut milk dishes,

fried rice, peanut sauce, crispy noodles.

Thanks. Looks lovely. I love curry and I love Thai food. Unfortunately, the ingredient known as galangal (looks a bit like root ginger) tastes soapy to me. However, I was going to look for some red curry paste today as I have a recipe from the Hairy Bikers (t.v. chefs), 'Hairy Dieters Make it easy' recipe book. So, I will take a look at the curry kits in the supermarket.

Are you sure it's galangal? because there is a common genetic variation where people describe coriander as tasting soapy.

Either way, not pleasant.

The Tesco extra near me has Blue Dragon in the cooking sauces aisle, but tubs of curry paste in the world foods aisle. Worth looking at both, if you have them.
