Today's dinner plan was an attempt at stuffed mushrooms again... as you can see, that did not go to plan. I put the large mushrooms in the oven for 5 mins or so upside down to roast a bit before turning over, filling with mix and cooking for 20 mins. However, when I took them out to put mix in, they were flatter than a plate! I don't know what I'm doing wrong or how I'm supposed to keep them open and big enough to stuff! So I had a 2 minute annoyed panic before just cutting up the big mushrooms, putting into the mix, throwing everything in the frying pan and adding noodles. So today is stir fry.. I guess lol.
1x half green pepper
1x half red pepper
3x flat mushrooms
2 slices of onion
3 baby tomatoes
2 garlic cloves
1tsp paprika
4tsp + splashes light soy sauce
100g Dragonfly tofu
