I absolutely love planning my meals - tonights was super doopah easy:bbcgoodfood.com/recipes/997... - when I weighed out ingredients, I got it to under 270 calories a portion (110g chicken breasts).
It does get easier! And for me I use a weight loss website that enables me to enter recipes - as I love to cook from scratch that really helps.
Good idea to batch cook Pumpkins. Go for it!!!
My freezer always has lots to choose from that I've made and frozen into portions. When I come home from work I can rarely be bothered to cook from scratch so I shove my nose in the freezer. It's just like going to the supermarket but I know I love what's there and I know what's gone into them.
I can vouch for batch cooking, I have a massive pot and batch cook 2 weeks worth of soup at a time. Really helps keep you on track. Even though I slipped up today..
