What's everyone having for tea?

Hi, when I'm on a diet I love planning healthy meals and cooking, doing cod, baby new potatoes, fresh mixed vegetables and home made parsley sauce for tea, 475 calories, what are you having?

Sounds lovely Caz. I didn't have my planned lunch and completely ignored making plans for dinner but I'm thinking of making a chicken & leek soup 😊

It's turkey sausages, new potatoes and runner beans for me. I made a batch of skinny lasagne earlier (Hairy Dieters), so that's tomorrow sorted!

Oo, let me know how that goes!  I have that book and have done a few of the recipes and like the sound of the lasagne  (leeks instead of pasta,  right? ) yum!

Hi there Suffolkwomble,

Yes leeks replace pasta. It is nice and a good alternative, I'm a real fresh pasta fan and it's one of my big miss foods,  this option helps!

Hi Caz28  I love planning some healthy meals too...today it was the left over chicken & sweet potato curry I made at the weekend, with spinach for 400 calories. Your cod and parsley sauce sounds delish! X

I've just got some fresh ingredients in to make a nut loaf - celery, carrots, onions, walnuts, breadcrumbs and an egg. I'll have it with peas, parsnips and a tomato sauce. Don't know the calories but I imagine a serving will come to about 500cals. Looking forward to getting started actually! 😊

Recipe from slimming world mag - salmon, potato salad with new potatoes, radishes, spring onions and low fat fromage frais. And salad. And maybe a cheeky freddo for dessert :-)

We had our main meal at lunchtime (smoked haddock and poached egg) so tonight we had anchovy and tomato risotto from the BBC good food website 😊 My portion was just 50g rice, about 20g anchovies in olive oil, onion, tomatoes, and stock. I added a red pepper and a few frozen peas 😊 delicious and very satisfying.

There is another veggie version without  the anchovies 😊 I love risotto

I had wholemeal spaghetti with a bit of pesto mixed in, a lump of salmon on top and a poached egg on top of that (courtesy of my bantams) :-)  yummy!

Hi I had meatballs with low fat pasta sauce and boodles (butternut squash noodles) instead of spaghetti and a light sprinkling of low fat cheddar cheese. It was delish and still had enough calories for a low fat yoghurt. Some great sounding meals on here too.
