Healthy lunch help

Hello,

Newbie here:)

I was just wondering if some of you that have done so well would be able to offer any advice on some healthy packed lunch ideas? This is what I struggle with the most because I end up having the same all week and getting bored.

Any suggestions would be really appreciated,

Stir fried rice? Healthy quiche and salad ( tesco, lidl and waitrose do mini ones), pasta salad, I eat at work, don't take in anymore.

I swear by granary roll with a mega salad and bolied egg white with a slice of meat or tuna, no butter but a wee bit of mayo, I put the salad in a tub and add it just before I eat it (hate my roll going soggy) very filling

Make extra dinner and pack some of that into a plastic tub to take in and microwave the next day if you have access to a microwave.

A soup flask is handy if you like soup. Hearty ones are fabulous at filling you up.

Pitta bread can be stuffed with lots of tasty ingredients and make a pleasant change.

Make extra salad the night before and take some of that for lunch with something different added, like beans or rice (or whatever you fancy).

As LotToLose says, stuffed pitta is always good - you can pack much more salad in than in a standard sandwich. Spread with something like houmous or home made pate and then add grated carrot, shredded lettuce or other greens, spring onion or a little finely chopped regular onion, tomatos etc. You could maybe have a couple of those and some fruit.

For the protein you could go for lentil or bean pate, or mackerel pate made with quark, or else something like baked falafel or veggie burgers.

It can be nice to make a smoothie to take with you too.

elacol, would you consider including the egg yolk instead of having the mayo? Its packed with loads of good nutrients and you do need some fat in order to absorb all the nutrients from the rest of your meal - and when your nutritional needs are satisfied, hopefully you'll be less inclined to feel hungry.

Feeling hungry now, time for breakfast ...

Bake a frittata the night before and save a good couple of slices to have with some salad. Pepper and Tomato salad with sliced cold cooked sausages (I'm veggie so mine are quorn). Sweetcorn and grated carrot with some baby spinach leaves and feta cheese cubes. These are some of my current favourites.☀️
