What's your calorie range? Have you checked it at the NHS BMI calculator? I'd suggest you aim for around a third of your total at each meal.
Anything with eggs is a great idea. Bacon, egg, tomato and mushrooms; an endless variety of omelettes and frittatas with bacon, chorizo, peppers, spinach, broccoli, courgette, tomatoes, smoked salmon, cheese, blue cheese, walnuts..... plus a salad. Try and get a couple of veg into whatever you plan.
Soups of all sorts. Add in cheese or cream or yoghurt or peanut butter to up the calories.
Personally I think you can't go wrong with omelettes. Sandwiches, crisps and kitkat are probably the worst possible choice; if there were ever a company marketing a "weight gain meal", that's what they'd put in it! So basically anything will be an improvement.
I can sympathize with not being bothered to prepare something, but eggs are even quicker than a sandwich. As BridgeGirl said, add a salad (with a nice dressing) and you've got yourself a meal. I wouldn't normally recommend bagged salads (because they're not very fresh), but if it gets you into that habit they ARE very convenient, especially as winter approaches and growing-your-own isn't realistic without expensive equipment.
I have to ask: are you that kind of bear that has to go out to the woods, or do you have an indoor bathroom?
Thank you for all your suggestions. Today I made a omelette with onion, tomato and cheese. It was delicious. Going to do a vegetable quiche at the weekend to have for the week I think. Then it’s there for when I get home.
What are people’s thoughts on pasta and pesto??? I love it but is it high in calories??
