I found a recipe online for quick sweet potato hash. I added some coriander and topped with sesame seeds. I also fried up some "Oumph" chunky with a bit of mushroom sauce to add that "meaty"feel (and protein)
Served with a simple side salad. Super tasty👍😁

Just over 30 mins start to finish with time during cooking to throw a salad together. Really pleased with it. Paul couldn't scrape his plate clean enough it was that good! Great flavours 😁
