Tonight I wanted something with minimum fuss and maximum taste so thought about Debs baked potato last night and put white onion, baby sweet peppers curly kale a tin of peeled plum tomatoes chia seeds spices and drizzled a little olive oil over it scattered ground almonds on top and baked it with the potato, after about 15 mins I added some stock to it and left it to bake and et voila, its a simple but filling meal. And I like that.π
Looks very tasty and filling. Baked potatoes are great as they cook them selves whilst you get on with your life and then you come back and theyβre all cooked! π
