Tonight I wanted something with minimum fuss and maximum taste so thought about Debs baked potato last night and put white onion, baby sweet peppers curly kale a tin of peeled plum tomatoes chia seeds spices and drizzled a little olive oil over it scattered ground almonds on top and baked it with the potato, after about 15 mins I added some stock to it and left it to bake and et voila, its a simple but filling meal. And I like that.π
