I posted a recipe recently for an apple crisp and I made this. And I liked the look of their cashew cream so had a pop and this is what I made.
I soaked unsalted cashew nuts in boiling water for about 2 hours then I drained the water and blended the softened cashew nuts with coconut milk and a little vanilla and whizzed it up and then left it in my fridge.
The apple slice shows how the chia seeds with the fruit helps to make it nice and firm and the cream is really thick and moorish. As I didn't add any sugar I sprinkled a little coconut sugar on top, more for the visual effect...LOL
For my first attempt at a thick cashew cream I'm very pleased with the outcome here's the original apple crisp recipe and their cashew cream and I'm really pleased with how mine turned out. π
