I made a chocolate cake. As Jerry posting his tea and biscuits made me fancy something nice as well.
So I just put all the ingredients below in a mixer and whisked it up, baked it for about 20 mins.
1 1/2 cups Flour
1/2 cup Cacao
2 bananas mashed
1/2 cup coconut sugar
Vanilla paste
Orgran Egg substitute
Baking powder
Apple cider vinegar
A little hot water
Cashew maple cream
1/2 cup cashews
1/4 to 1/2 cup maple syrup
A teaspoon coconut oil
Dash of Apple cider vinegar
Put it all in a blender and blend for a few minutes.
I think this is reasonably healthy it has no fat In the cake as I used mashed bananas instead.
The icing would be smoother if I hadnβt rushed and had time to soak the nuts but is fine as it is. The cream/frosting can be made thicker by adding more nuts.
Jerry mentioned to me about orgran egg replacer. I think itβs this that makes the difference to vegan baking. As I had little success before I got it. I got mine on line. Also if you added some nuts to the mix then they would be like brownies. π
Yay that means I'll be able to make it then as funilly enough I bought some in our vegan shop in the city centre last week and it's the exact same one that you haveπ

By the way where did you get your vanilla paste and how much baking powder did you use? Sorry for so many questions.π€
Thatβs ok π I used just under a teaspoon of baking powder which was the last thing I added and put a cap full of Apple cider vinegar on top of the baking powder so it fizzed up. The vanilla paste I use and you only need a drop is Nielsen Massey Vanillia bean paste from the supermarket. You couldnβt taste it so not essential. If you are okay with coffee (which I think you like π€) add a large teaspoon of instant coffee mixed with a little hot water and that would bring out the taste of the chocolate. I used two teaspoons of egg replacer. The maple icing you put in the fridge and then you can spread it on top as it thickens or make an avocado, cacao Frosting instead which I would have done if the avocados werenβt rock hard lol. It would be very nice even with no icing and just nuts added to the mix as well.... Good luck! ππππ±
Thank you Ali ad that's really helpful. Yes you are right I certainly do like coffee in fact I love it. When I met friends on Tuesday and Wednesday for coffee in my lunch break the cafe/restaurant made it with almond milk and it was delicious. Unfortunately the place only has different milk when one of the members of staff is there and she only works there on Tuesdays and Wednesday's. I'll definitely be making the cake you made as it certainly is 'my cup of tea'
