Ground red quinoa and almonds topped gooseberry crumble with banana cashew ice-cream 🍨

Hi everyone,

I made this nut crumble to have with some ice cream I wanted to test. I used my coffee grinder to make a coarse quinoa meal. Using 75g with 50g ground almonds 25g flaked almonds, 75g coconut oil and 30g coconut sugar all whizzed up and spread on top of 500g gooseberries and baked.

Way to go, Jerry! :-) It looks fantastic and quinoa needs to be with the ice cream! Just my humble opinion! :-)

Hi Leah, peaches are a good substitute on their own or with blueberries or strawberries. I'm going to make some strawberry ice cream soon so watch this space...😊

did you grind up uncooked quinoa? if so did you soak it?

Thanks sunny369, I just put dry quinoa in my coffee grinder and whizzed it into a coarse meal.

I can buy quinoa flour but the shop doesn't always stock it so I grind my own and quinoa seed is 1/2 the price of the flour.

I love crumbles too as they're so easy to make and taste good...😊

that's interesting, for some reason I was under the impression it had to be cooked or sprouted, so good to know.
