I'm afraid I've become a cashew nutter as I'm really enjoying making creams and butter with it.
I was going to make some butter using cashew nuts coconut oil and maple syrup as that seemed a good starting point but ended up roasting some cashew nuts then when they had cooled a little I thought I'd grind them up and leave them soaking in some coconut oil. However my grinder started making a funny noise and I looked and the roasted cashew nuts had turned into a thick buttery paste and its so smooth and delicious I didn't bother adding anything else to it. π
Hi Jen, I used around 100g roasted them for 10 mins and added nothing (they're not salted cashew nuts) I think because they were still warm the oil came out of the nuts quicker as it went like this in less than 2 mins. Its not a very big jar mind... π

I also make cashew nut butter as well as almond and add nothing. I now also make cashew nut milk by using a cup of cashews soaked in water overnight or for more than 4 hours; rinse the nuts in water until the water runs clear, add the nuts and 2 cups of water to a blender and blend (I blend for around 4 minutes), then add another two cups of water, some natural vanilla and 2 tablespoons of maple syrup. I bottle it in glass bottles and use filtered water. The milk is delicious.

I've seen your nut butter and your raw bars that you make with them Alicia and think they're great.
I still want to make your sourdough bread but am going to wait until I've moved as gluten free sourdough bread is harder to make.
I also want to make some cashew milk so thanks for your cashew milk recipe, it's surprisingly easy. π
