Homemade Gluten-free Cashew Cheese Coconut Shreds Cake. πŸŒ±πŸ§€πŸ₯₯πŸ°πŸ˜‹β€οΈ

Hello everyone, hope you have a joyful midweek so far ! πŸ€—

So I have been experimenting with making vegan cheese using homemade cashew milk.

First trial, I used lemon juice and it was liquid, did not form solid, not even a paste. πŸ˜…

This is my second trial, here is how I mixed:

1. Blended 80g cashew nuts with 150 ml water, and added 1 pre/probiotic capsule. Left mixture sit at room temperature for 12 hours.

2. Added 1/2 tsp of salt, 1 tsp apple cider vinegar, 240ml coconut oil, and 2 tsp nutritional yeast.

3. Poured in BPA free silicon herb mold and left in the fridge for few hours.

It didn’t form solid cube but more like a thick kefir type. Hmmm I’m thinking maybe adding agar. πŸ€”

I decided to bake coconut shreds cake with this soft cheese and it tastes delicious. πŸ°πŸ˜πŸ‘

It’s not a sweet kind of cake, more like a yogurt cake and the coconut shreds mixed with coconut milk baked makes it very savory too. πŸ˜‹πŸ‘

I sure will try again to get the right texture. I do enjoy the process of experimenting as I can use for different purposes even I haven’t gotten to the solid cheese form yet. πŸ˜‚

It does have creamy and tangy, cheese like taste for sure when I sampled by itself. Because I made a cake out of it as I blended with gluten free flour so it is very soft, milky kind of cake but it is not similar to traditional cheesecake with crust.

It’s all trial and error. The first β€˜prototype’ sounds a bit like kefir, but it’s all healthful and edible, which is important thing.

You are absolutely right Nessie87, it’s all about experimenting and I do enjoy the process. It is like kefir but it is healthy and edible as we manage how much and which ingredients we put in our homemade food. 😊

I also enjoyed it as a cheesy dip by adding some freshly chopped herbs. I will try again to get to more of a solid cheese texture. πŸ˜πŸ‘

I haven’t figured it out the solid cheese texture form yet but I currently enjoy it as a cheesy dip with some herbs also. πŸ˜‹πŸ‘

I will try again until I get it right. It is fun when we add this, substract that in homemade food. πŸ˜πŸ‘

Hi Debs, it’s such a lovely day today as it is not gloomy and not too hot over here. I finished this cheesy herb dip yesterday. 😁 and I just ordered more raw cashew to redo the batch again with few changes, hopefully I get them delivered by Sunday. I think 3rd time is a charm, I’ll add a bit of tapioca starch and agar will work out the texture for sure. πŸ˜πŸ‘

For today, i just made a quick veggie mixed with this new rice I am trying now (green pea, chickpea and cauliflower blend) casserole.πŸ˜‹

That is a great Idea Koko - adding Agar 😊 Weather is a bit gloomy here, which I don't mind, Saturday's are the only day I stay in -so I can catch up on everything - I really need to finish painting the room in the toilet, I have been putting it off πŸ™‚

Your casserole sounds super healthy, and I bet that was very tasty.

I did enjoy my Tea last night - It was one of my homemade veggie and cheese burgers with salad and a little tomato pasta bake - which I used chickpea pasta 😊

I have some casserole leftovers so no cooking for food today. Instead I made smoothie (beets, pineapple and parsley) plus dark choc chips cupcakes (I used matcha, purple potatoes and dragon fruit powder to get the desired colors and taste). It is my β€œtake it easy weekend” for me. 😁

Thank you very much Debs, I was in the mood for some cute looking cupcakes 😁 and smoothie because it’s too hot to have any appetite to be in over 100F. πŸ₯΅

You are right about how paint color can look different on the wall. When i remodeled my bathroom, I chose greyish blue and it looked much lighter on the wall. What I did was add another finishing coat on top to make it less bright. Hmm what can you change now?πŸ€”

Oh my goodness, so hot - thankfully we don't see heat like that - mind you must be nice in your pool.

Greyish Blue was the colour I used for the Toilet but it looks more a musky blue

Hi Debs, right before season changes, it tends to heat up tremendously like this. It’s hard to eat solid food for me so I think It’s going to be all day Avocado πŸ₯‘ menu, starting πŸ₯‘smoothie 🍹as breakfast. πŸ˜πŸ‘

The only time I use the pool is early morning and in the evening now because of the strong sun and heat. πŸ˜…

Oh my goodness you picked the same color as I did as we love nature. πŸ˜‡β€οΈ You can see how the color turned out for mine after finishing coat. 😁
