I was diagnosed with Hypothyroidism just over a year ago and I’ve had various blood tests recently regarding my Thyroid and they have come back normal with the help of Levothyroxine. However, I am still very tired and have all over itchy skin. Has anyone else experienced this even though your results are normal?

No such thing as 'normal' where thyroid labs are concerned. But I take it you mean the results are somewhere within the range. But the ranges are too wide to be 'normal' all the way through. So, I should imagine the answer to your question is: yes! Many, many people.
So, the best thing to do is post your results, with their ranges, and let us have a look. You're probably under-medicated, most hypos are.
Well, your TSH is a little high for someone on thyroid hormone replacement (levo).
FT4: 15.7 pmol/l (Range 10.5 - 21) 49.52%
And your FT4 is low - most hypos need it to be around 75% though the range. So, that means that your FT3 is going to be even lower. And it's low T3 that ccauses symptoms like fatigue. So, even though your results are in-range, they are far from optimal and you need an increase in levo.
Have you had antibodies tested? What about vit D, vit B12, folate and ferritin?
I don't know anything about liver results, and the rest, except that your potassium could be higher. Eat more bananas?
It's not about being 'within' range, it's about being in the right place within the range. Do you have the numbers for those? And if you're having B12 shots, you should also be taking a good daily B complex because the Bs all work together and need to be kept balanced. And by a 'good' B complex, I mean one with methlycobalamin and methyfolate. nd y
Doctors consider my results ‘normal’ so not sure what I can do from here as they will tell me my bloods were fine. What would you suggest?
How about jumping up and down and stamping your feet until they give you a rise in dose? No, I'm joking, but it is time to stand up for yourself and insist on an increase. Doesn't matter what they consider 'normal', it's obviously not normal for you. And you must make that very clear. They have no idea what they're doing, anyway.
And when it comes to nutrients, they are less than useless! But you don't need their permission to buy nutritional supplements and treat yourself with them. Come to that, you can buy your own levo on-line and treat yourself with that, too.
