I've been diagnosed with Hashimoto's and have all the symptoms of underactive thyroid, but my test result TSH of 0.01 and FT4 of 14.4 suggests I'm hypo / over-medicated. Yet I'm bloated, continious weight gain. When I reduce my dosage of Eltroxin I quickly gain weight, extremely fatigued and considerable hair loss. Don't understand it at all.

Thyroid meds only replace what your thyroid should be creating, they don't fix the thyroid disease. If you have Hashimoto's, you must stop eating all gluten. Go to hypothyroidmom.com. It's a brilliant website. For whatever reason, when you eat gluten, the body attacks the thyroid. My friends with Hashimoto's have stopped eating gluten and feel much much better.
If your antibodies are high this is Hashimoto's, (also known by medics here in UK more commonly as autoimmune thyroid disease).
About 90% of all hypothyroidism in Uk is due to Hashimoto's
Essential to test vitamin D, folate, ferritin and B12.

Poor gut function can lead leaky gut (literally holes in gut wall) this can cause food intolerances. Most common by far is gluten
According to Izabella Wentz the Thyroid Pharmacist approx 5% with Hashimoto's are coeliac, but over 80% find gluten free diet helps significantly. Either due to direct gluten intolerance (no test available) or due to leaky gut and gluten causing molecular mimicry (see Amy Myers link)
But don't be surprised that GP or endo never mention gut, gluten or low vitamins. Hashimoto's Gut connection is very poorly understood
Changing to a strictly gluten free diet may help reduce symptoms, help gut heal and slowly lower TPO antibodies
Ideally ask GP for coeliac blood test first

Your FT4 looks low - can you add ranges
Essential to test FT3 at same time as FT4 and TSH
If you are poor converter and/or low vitamin levels then it's common for TSH to be low even when under medicated
All thyroid tests should be done as early as possible in morning and fasting and don't take Levo in the 24 hours prior to test, delay and take straight after. This gives highest TSH, lowest FT4 and most consistent results
