Does anyone have any good gluten free cake/biscuit recipes or know of a good website to look at? And can you just swap SR flour in a recipe for GF?

You can swap gf four for ap, but if you normally use sr you'll have to add gf baking powder. You can google the proportions to find out how much baking powder is required. I think the Dove's Farm one is quite good and I must say my gf genoise sponge is possibly nicer than the usual kind.

Hello puncturedbicycle please can you share your recipie for Genoise sponge? (If not too much trouble)I'm gf and on the lookout for good cake recipes.

The best cake recipes I find are flourless ones rather than ones made with gluten free flour. Nigella has some good flourless cake recipes. There is also a good chocolate brownie recipe on the Doves website.

No worries..I hate most stuff made with GF flour, the texture is awful. Flourless cakes though are usually really indulgent :-)

Yes I agree. I have a lovely brownie recipe made with ground almonds and it's yummy but, I miss making Victoria sponge as it's not the same with gf flour. I just make it with normal flour for my family but don't have any.

Yeah me too. It is awful when you enjoy baking (as I do) and then have to go GF. I still make some stuff for the family with flour but I have been pleasantly surprised by the amount of lovely recipes that I can make too. Chocolate torte is the current favourite..I just thank goodness that chocolate isn't off the menu or I think I'd throw in the towel :-D I also make rocky road and use sainsburys free from shortbread in place of digestive biscuits..yummy!

Thanks NatChap for some great tips. I love baking and still bake lots of stuff and I'm determined not to be a misery since going gf as I feel sooo much better. Agree about the choc - love it. Thorntons Classic collection are good for gluten frees like us! Will try your shortbread tip for rocky road as we love rocky road as well!

Thanks for flourless recipes. I'm sensitive to potato and most (if not all) of the gluten free flours include potato starch.

So far I've only found one make of gf bread which is also potato free. Keep reading the labels!

I have just resigned myself to the fact I can't eat bread. The GF stuff is just terrible, I would rather go without. What I do love though, and have mentioned it on HU a few times, are the Schar crispbreads. They're delicious whether you are GF or not. you can even slice them (if your careful) into 'soldiers' for dipping in your boiled egg ;-) No potato starch in them x

It's the Schar brand that I use (previously called Dietary Specials). I think all their products are potato free. I eat their seeded loaf, but the white is useless. I usually toast them. their ciabbata rolls suggest that you warm in the oven, but I slice in half and toast.

Have you tried Corn Thins? The original ones are gluten free, though I'm not sure about the other variations. They are usually on the shelves with Ryvita and regular savoury biscuits.

SeaVee79 thanks for that link, I love banana bread so will try that. I bought some coconut flour a while ago and have been struggling to find recipes using it.

It really is a great and easy recipie once u get the hang. I make at least one a wk. Msg me if u get any probs with it as I'm sure I could help even them out. I sometimes add a tiny dash of (almond) milk to the mixture as sometimes it can seem a little dry.

King Arthur has a gluten free baking mix available on Amazon UK that you might find helpful. King Arthur does recommend that you follow their recipes when using their baking mixes. It is a little pricey but nice to be able to have the occasional pancake or brownie or bisquit.

If you like pancakes (we have them every Sunday) try buckwheat flour. I use that instead of plain flour and even my kids can't tell the difference. it is more 'absorbant' though so you do need more liquid (or less flour!) than a conventional pancake recipe. I use 1 cup flour, 2 eggs and up to 2 cups milk. I add one cup milk, whisk and then gradually add more until it's a thin cream consistency...bit of trial and error involved depending on how you like your pancakes. I prefer mine very thin, more like crepes. Buckwheat is more nutritious too.

I find that for cakes if I use a half and half mix of rice flour and corn four with a bit of baking powder they taste more like ordinary cakes. Not tried it in biscuits though. May not roll out very well.
