I am trying to find a Spelt Sourdough that has not got any additives, like FODMAP sugars, and is made exclusively with Spelt flour.
My Nutritionist has recommended Waitrose number 1 Spelt Sourdough but my local store does not seem to stock it.
I have IBS, SIBO in fact, and there is a suspicion that I may have Non-celiac Gluten Sensitivity. In an effort to test this it has been suggested that Spelt Sourdough is low in Fructan's and other FODMAP's so we can check for any reaction to the Gluten.
Has anyone tried other UK supermarket's brands'? Thanks...
How about learning to make your own. I have not made spelt but I am currently experimenting with normal sourdough and it is a fascinating science. I did the full thing - making my own starter from flour and water and the yeast in the air around me.
In the end I got used to a wide variety of Sourdoughs and found that my symptoms reduced in all cases. In reality, all sourdough is lower fodmap than normal bread. Just spelt the lowest.
Watch out for cheap supermarket sourdough is it is sometimes fake sourdough - the gails one at waitrose ocado is great, expensive but I freeze it and use it through the week!
I must confess I am not a lover of bread ordinarily but I am at the fructan testing stage of my reintroduction diet and wheat bread and pasta is high but also obviously it is gluten loaded too.
The spelt sourdough is low in fructans but still contains gluten so it has be suggested to test my gluten sensitivity alone before moving on
