I've made individual cheesecakes. Also, I only had 400g of the Violife Cream Cheese so just cut the cream and icing sugar down by a 3rd, I kept the biscuit base the same amount, just made more with a smaller amount of mixture - better for the waistline I'd say.

Thanks Alicia I'll look it up and hope the cheese as I'm sure it will be is lower saturated fat than cheese as I used to love cheesecake but with my anxiety about cholestrol I try not to over do the cheese I'd like to try the vegan I'll look up what vegan cheese is xx

I rarely eat anything like this Mandy so I don't really worry too much, also these can be frozen for 2 to 3 months. I'm glad I have my little pots as you can't overeat. Believe you me if it was a full size cheesecake I'd eat loads more๐
Vegan cheese tends to be made using coconut oil. xx๐

Saw this post a couple of weeks ago and finally got around to trying it, not a fan of vanilla so swapped that out for some lemon juice and it was just like the ones mum used to make, with the added benefit of being plant based. Thanks for sharing the recipe โบ๏ธ
