Leftovers For Lunch: Quiche with Rice Crust

Good afternoon everyone,

This was my leftover quiche with white rice crust and sliced mushrooms with cheddar cheese from last night's dinner. It was even better today since all the flavors melted together. I even had the leftover pumpkin spiced pudding on the side and it was better, too. I really enjoyed everything.

Hiya,

It looks yum! How did you make the rice crust? I make a quiche in a silicone baking tray without pastry. It looks a bit like a frittata but without potatoes.

Thank you! You need eggs, cheddar cheese, rice, sliced mushrooms and anything else you want to add to the quiche.😀👍🌈

You can always use any type of rice to do the crust. Here’s the recipe:

Use 2 cups of cooked rice and a 1/3 cup shredded cheese and 1 egg. Mix it together and make your crust (microwave 1 minute).

I might actually try that,thank you. But now i'm going to open a tin of custard to have on my homemade apple crumble i made yesterday, i've eaten late tonight,getting to be an habit, Haha. Warm wishes,tina,x🤗

The recipe caught my eye before I even saw it was yours Leah. Looks fantastic with KEn being completly keto almost - this pandmeic has caused some cheating although not main meals. I waould creat with riced cauliflower I'm positive it would turn out lovely and leftovers do truly blend betterr for the next day. Yummy! Looking forward to making.
