This was what I had for dinner tonight. It was a quiche with long grain wild rice, sliced mushrooms, cheddar cheese and eggs mixed together. I had string beans, salad with fake bacon bits and Italian dressing thatβs fat free. I had a parfait of sugar free chocolate pudding and Greek raspberry yogurt on the bottom on the side. Everything was really good and I will have the leftover slice of quiche for lunch tomorrow afternoon.

Thank you! The rice is store bought, but you mix the eggs and cheese with mushrooms into the crust and put it in the stove to cook it. Leftovers can be microwaved.πππ
I'd love to be able to visit one of our pick your own farms but unfortunately with the pandemic I cannot see I'll be able to do that so will have to buy from store. I love peaches as well but unfortunately they don't love me.
I have a cousin who when she was really young, she had issues with strawberries, but since she has been an adult, I think she may have grown out of whatever was causing the issues. Not sure, though.
Sounds really nice , and low calorie no doubt. Also sounds easy to make. I used to do my quiches at home with ready made cases. But now I have to eat different things that require little if any preparation but not necessarily salad only. Enjoy your day
The carbs. for the meal was 65 total when you add everything up that had carbs. in them. The salad and dressing with fake bacon bits was lower compared to the rice, pudding and yogurt. The string beans were less, too.
Tonight, we're having veggie burgers and homemade potato French fries. Not too sure else what we will have on the side, but I'll find out later around 4:30 or 5 pm. Do you like big salads?
