Quiche with Rice Crust: Dinner πŸ₯˜

This was what I had for dinner tonight. It was a quiche with long grain wild rice, sliced mushrooms, cheddar cheese and eggs mixed together. I had string beans, salad with fake bacon bits and Italian dressing that’s fat free. I had a parfait of sugar free chocolate pudding and Greek raspberry yogurt on the bottom on the side. Everything was really good and I will have the leftover slice of quiche for lunch tomorrow afternoon.

Stay safe, healthy and well!πŸ˜€πŸ‘πŸŒˆ

That looks delicious and healthy too! How do you make the rice crust? I'm impressed you have a slice left ...

Thank you! The rice is store bought, but you mix the eggs and cheese with mushrooms into the crust and put it in the stove to cook it. Leftovers can be microwaved.πŸ˜€πŸ‘πŸŒˆ

Are you sure you don’t want to come over with your recipes? That looks pretty good.

Everything was tasty and I can't wait to have the leftover piece today. I love when flavors blend together overnight. :-)

I bet its lovely hot or cold πŸ™‚

It's not as easy to cut when cold, but I have tried it that way once, too. :-)

That really does look good and I bet you did enjoy it.πŸ˜‹πŸŒˆ

You're right! I did enjoy it and I learned that using wild rice works as well as the brown and white rice versions. :-)

in reply to Activity2004

That's good and it really did look lovely. Good that you worked out that using other rice works just as well. :)

It was really good for today. I had strawberries on the side for lunch with the quiche. :-)

in reply to Activity2004

Now that does sound delicious, I love strawberries :)

We have to order more from one of the stores so we can get a new box of strawberries for the next few weeks coming up. :-)

in reply to Activity2004

I'd love to be able to visit one of our pick your own farms but unfortunately with the pandemic I cannot see I'll be able to do that so will have to buy from store. I love peaches as well but unfortunately they don't love me.

I have a cousin who when she was really young, she had issues with strawberries, but since she has been an adult, I think she may have grown out of whatever was causing the issues. Not sure, though.

in reply to Activity2004

Isn't it strange how we can or cannot eat something then all of a sudden it changes. I'm glad your cousin can eat them now.😊

Yes, very strange! Not sure how that works sometimes, but we deal with it when necessary.πŸ˜€πŸ‘πŸŒˆ

in reply to Activity2004

It is but we certainly do. I cannot fault this low fodmap diet I'm on😊🌈

Sounds really nice , and low calorie no doubt. Also sounds easy to make. I used to do my quiches at home with ready made cases. But now I have to eat different things that require little if any preparation but not necessarily salad only. Enjoy your day

The carbs. for the meal was 65 total when you add everything up that had carbs. in them. The salad and dressing with fake bacon bits was lower compared to the rice, pudding and yogurt. The string beans were less, too. :-)

Hope you're having a great day, too. :-)

That's a great idea! What's your favorite rice flavor? You can try it with that flavor of rice. :-)

Cold doesn't cut so easily, but I've tried that once a long time ago. :-)

It's a tie between wild and brown rice flavors for me. White is last resort if we don't have anything else. :-)

I don't really have a favourite, other than 'edible.' I think your descriptions of your food are very mouth watering. I need food, NOW....😁🌸

Tonight, we're having veggie burgers and homemade potato French fries. Not too sure else what we will have on the side, but I'll find out later around 4:30 or 5 pm. :-) Do you like big salads?
