As some of you lovely people might already know, I work in a primary school. A friend and I run an after-school cooking club. We are making jammy biscuits this week, so it was only right that I should trial the recipe and carry out a taste test. Conclusion: very easy to make and so, so yummy! π π

Oh that reminds me of the disaster I had baking buns at schoolβ¦.aged about 9!
I was so ashamed of my efforts..I deliberately left them on the bus on the way home!

SIMPLE JAMMY BISCUITS
Prep: 25 minutes. Cook time: 10-12 minutes in 190Β°C/Gas mark 5 oven (close eye after 10 mins.)
Makes 12.
Ingredients
200g Self Raising flour
100g Caster Sugar
100g Butter
1 egg (lightly beaten)
6-8 teaspoons Jam (approx)
Method
Step 1
Heat oven to 190Β°C/ Gas 5
Rub flour, sugar and butter together until the mixture resembles fine breadcrumbs.
Add enough egg so that mixture comes together to form a stiff dough. If you add too much egg, and it becomes sticky, add a little more flour.
Step 2
Flour your hands and divide the dough into 12 equal-sized balls.
Grease and flour a baking sheet or use a silicone-baking sheet (no need to grease and flour the silicone-baking sheet).
Evenly place the balls on the tray, allowing room for the biscuits to spread slightly.
Step 3
Slightly squash the biscuits down and make an indentation with your thumb, or the end of a wooden spoon. See image 1.
Put about Β½ tsp, or so, of jam in the indentation. Make sure you do not overfill them.
Bake for 10-12 minutes in the oven until light golden and slightly risen. See image 2.
Place on wire rack to cool.
These delicious, jammy biscuits taste even better when completely cooled.
Store in airtight container.

Castor sugar is slightly finer than granulated sugar.
