HI Thanks for the recipes. I was most interested in the Tofu Sandwich until I looked at the nutritional stats. 849 of potassium?! That is almost the total that I can have for a full day! Even though my transplant is working at normal capacity, it does not (for some reason the doctors can't explain) clear potassium very well and I must watch my intake. So disappointing! I will try the minestrone soup.
