This was dinner tonight - replacing half the spaghetti with "courgetti" saves massively on the calories and allow you to enjoy a generous sprinkling of grated cheese on top!
Serves 2
Prawns Jumbo -110g
Wholewheat Spaghetti -60g
Dried Chilli Pepper Flakes -½ Tsp/1.5g
Davidstow Mature Cheddar (grated) -40g
Creme Fraiche - 2 tblsps / 60ml
Courgette - 225g
Olive Oil -2 Tsps / 10ml
Fresh Parsley -1 Tbsp/3.8g
Method:
Cook the spaghetti as per the instructions on the packet.
Julienne the courgette into fine strands. Grate the cheese.
Heat a large frying pan over a medium heat and add the olive oil. Add the courgette and chilli flakes and fry for around 5-6 minutes until softened. Add the parsley and continue to cook for one minute. Add the creme fraiche and the prawns and continue to cook over a low heat for around 2 minutes until the prawns and creme fraiche are warmed through.
Drain the cooked wholewheat spaghetti and combine with the courgette and prawn mixture.
Serve into two large bowls and top with the grated cheese and a small sprig of parsley for garnish.
I can imagine this might be delicious if you replaced the parsley with mint and used the zest and juice of half a lemon!
