Today I had chicken with mozzarella baked on shredded cabbage and I tell you guys that was awesome
100g chicken breast (salted, peppered and garlic powdered )
100g cabbage, shredded
30g carrot, shredded
30g white onion, chopped
50g plain yogurt
3 tsp apple cider vinegar (optionally)
pinch of xylitol, pink salt and fresh grounded pepper
few cherry tomatoes
In a baking dish mix cabbage, carrot, onion, yogurt, vinegar and spices, place the chicken, mozzarella and tomatoes on top, sprinkle with oregano and bake (preferrably until mozzarella turns golden brown) for 30 minutes in 200C. Add chives, enjoy!
