my rhubarb is now flurishing . I usually make rhubarb crumble and compots for the freezer. Does onyone have any have any healthier versions of these delicious traditional recipes or new ways to use very tart rhubarb? Thank you all in advance.

I’m often eating mine as chia pudding.
100g stewed rhubarb including the juice, 100g yogurt and 25g chia seeds. It takes a couple of hours or so to set.
- and another one is to use chopped nuts and seeds as a crumble topping. Both ideas will take cream on top
make a summer drink with rhubarb, with or without ginger. I add rhubarb to the elderflower and lemon I freeze each spring. Rhubarb and custard cake. Rhubarb wine (won prizes with that one.)
I make a crumble topping with ground almonds, desiccated coconuts and chopped nuts (walnuts or flaked almonds) in melted butter. It's not really crumble-y but it tastes good. Must admit, I always have to put some sugar with rhubarb
Hi Arthrath, I've just made some cinnamon and rhubarb muffins. They are only 5g carbs each and really fluffy and light. Best type of low carb cakes i've made
