Bacon fat

Now that the weather is cooling down, I'm eating eggs and bacon more often. Just an idle question- any of you save bacon fat, and if so, what do you do with it? Mom used to before the cholesterol/fat scare came into vogue, but I was too little to care what she did with it!

When we were running a restaurant we used to save the bacon fat for frying eggs (the proper way, with about 5mm of oil in the pan) and for pastry shortening.

If I'm just cooking for myself, I add a little bit of the fat to scrambled eggs (I don't much like fried eggs). About half of it gets thrown into the compost though. Some people insist that you can't compost fat. Those people are wrong :)

Thanks, guy. Will do that.

Do you mean the fat you're left with when you've fried bacon? I use it for frying eggs and/or for stir frying shredded cabbage and leeks

in reply to BridgeGirl

Yes, the leftover grease. Will definitely use it to cook my eggs.

It's perfect for fried eggs. I never knew there was any other way until I left home and lost my Mother's influence :)

I eat it, it's the best bit !!! Unless you mean the cooking fat?

Oh, I eat it too on the cooked bacon. The best no doubt! Just talking about the leftover fat in the pan which I guess mostly is used for cooking up eggs.
