Statins are quite literally poison. Their negative effects on the body are so profound and wide-ranging it amazes me that humans don't drop down dead while taking them. We're very resilient creatures.

Based on my understanding of the research, your current diet wouldn't be thought to make the changes discussed above.
But the human body is a contrary thing and perhaps your fasting will be enough to help.
