At the moment for me - I would have to say crispy oven baked Jacket potatoes, with a thick lentil and veg soup filling or chargrilled veg filling with basil pesto 😋
My meal today was very simple and not especially beautiful but great comfort food; mashed potatoes, oven roasted garlic, Brussels sprouts and Savoy cabbage, tofu wiener which is organic but not gluten-free, and gravy. It was warming on a chilly day.
Another simple but warming meal on a cold windy day: mashed potatoes with oven roasted garlic, savoy and tenderstem broccoli with vegan protein pieces, and gravy. 🧄

This was my meal on Thursday but it actually lasted me for 4 meals with a variation on the theme of vegetables. I love meals that have plenty of leftovers to last for the next day or so. It was veggie haggis which is mostly hidden under the mashed potatoes, savoy, tenderstem broccoli, lamb’s lettuce and gravy. The presentation is pretty poor as usual 🙄 It tasted great though and I enjoyed my meals. 😋
