I am a college student and I have found myself derived from my needed nutrients. It has been challenging to make meals because of the lack of time. I can tell that not eating enough nutritional food is affecting me physically and mentally. Could someone suggest any simple and healthy recipes? I have no dietary restrictions so I am up to try anything. Thank you!

What's your freezer space like?
Things like Bolognese (bulked out with lentils), fajitas, chilli, curry and stew were big features in my student days. I tended to cook enough for 3-4 portions, eat it for 2 nights and freeze the other portion/s for when coursework built up.
Simple idea: get a bottle of extra virgin olive oil, and a bottle of vinegar you like the sound of. Oh, and a screw top jar. Mix about 3:1 oil:vinegar, salt pepper and shake it in the jar until it emulsifies. Simple, healthy vinaigrette. Don't buy store bought salad dressings as they will contain soybean/canola oil or sugar. Or both!
Then you just need a bagged salad from the supermarket and some protein. eg Chicken, tinned fish, a couple of eggs, cheese, chopped ham, pulses etc.
That's a meal that takes a minute to put together (plus a trip to the store). Supermarkets have a variety of bagged salads, and cooked meats and you can vary the dressing with herbs and spices or replace some of the oil with sour cream or add blue cheese.

I myself am a chef, studied for 4 years and worked in the industry for another 8. If your looking for easy basic recipes for college students, I got you.
Get a couple green peppers, an onion, an 18 pack of eggs, and some ziplock bags. Crack eggs into bowl and mix. Stand pepper up, take knife on angle and start cut near stem, using the knife to follow the contour top to bottom of the pepper. Get about 4 wedges a pepper and slice/dice them to tiny pieces. Peel the onion ( cut both ends off, put standing up and cut in half. Take the skin off. ) stand onion on flat side so it looks like half moon. Cut onion in .5 inch cuts from front to .5 inches from the back. Then turn onion and cut to make small dice. Mix peppers and onions with eggs and any cheese if you want then put into bags. Freeze bags and take out night before to defrost in bowl to use for morning.
You can also get big freezer bags and a 6 pack of chicken breast. . Cut fat from breast, fillet breast in half (horizontally) . And then you can put them in freezer bags with oil and seasonings, or soy and teriyaki with pepper ginger and a squeeze of fresh lemon or orange. Experiment. Then seal bags and freeze. My suggestion is take it out for dinner on previous night to mostly defrost overnight and then put in fridge to slow defrost rest of the way when you wake up in the a.m. I hav plenty of easy to do recipes for college so feel free to message anytime.
