Hi everyone,

Since the temperatures are a little warmer than they were yesterday, I had decided to have something that was cold for lunch.

I had a Cheddar/Muenster/Swiss (with big holes) Cheese Sandwich and mustard on gluten free bread. I also had a Strawberry Greek yogurt on the side with some water. The entire meal was 38 carbs..

I will have to try the onion and cheese idea soon. :-) Unfortunately, I can't have pickles since they have to much sodium/salt. :-(

Thank you. Will see if I can get either type of onion the next time I have to get a list done for the store nearby. :-) We can use the leftover for salads, too. :-)

I always used to have the strongest mature Cheddar that I could get, but for health reasons I have been trying Red Leicester and Double Gloucester as well as Violife Epic Mature vegan β€˜cheese’. I find the Cheddar tangy and the Red Leicester and Double Gloucester creamy. πŸ™‚πŸ˜‹

No it’s a hard cheese with a creamy texture and it has a kind of nuttiness about it. πŸ™‚

I don’t suppose you have any specialist cheese shops where you are, as I’m thinking it may be hard to track down. Maybe if your parents were able to describe it they might be able to get something similar. πŸ™‚πŸ€”

Hi Rach, Leah yes I'm same extra mature chedder can cause gut problems bad bacteria I was told by the specialist, I was eating nearly full big block weekly no wonder I got ill, I now only have red Leicester and my fav is double Gloucester it's nice on little savoury biscuits, I'm going to look up yogurt making I saw on TV from.scratch which gives good bacteria do important for the gut /immune system πŸ€—πŸ˜»

Morning Mandy, I’ve just looked up Double Gloucester and it seems high on calories. I only have a small piece when I do have it, but I think it’s back to the drawing board. Let us know if you decide to try making yoghurt, I have Fage Greek yoghurt every day. πŸ™‚

Good morning Rach that's very interesting I didn't know more calories in that cheese it is creamy we'll try the ones with holes and just eat the holes I mentioned to callandersgal on here there's no calories in the holes πŸ˜‚the yogurt I saw you make it again by saving some of the first made one it's fascinating the science of cookery, I'm having fried egg on white breadcake soon have a lovely sundayπŸ€—πŸ˜Ί

Yes, there are certain yogurts that are just to help with bacteria/gut health. I've had a few of those yogurts before I stopped going on vacations because of COVID. Those yogurts were in the hotels for breakfast each morning.

Hi Leah hope you and bunny are well I used to use actimol but realised too much sugar in them and as my colitis had gone and colon heeled for 6 years I thought I'd stop having it as sugar is so bad for immune etc some yogurts are high in saturated fat well not too bad at 2.5 but it all adds up πŸ€—πŸ˜»πŸ’this was tea

I have Red Leicester most the time now R, it's become my favourite over the last year or so, great grated on pasta and in soups or on top of veg casseroles too. The only one I use apart from RL is Gouda. I didn't used to like mild cheeses but I do now as I find Cheddar too fatty. x

I wish I could still have mature cheddar springcross. I must admit I do get a bit fed up trying to find the best foods to suit all health requirements plus my own tastes. I’m glad you’ve found something that meets your needs. πŸ™‚

I still like mature cheddar, although I don't eat it, but RL has kind of grown on me over the last year. The ones I miss the most are the soft cheeses. I agree about finding the best foods for all the health requirements though, it can be a pain at times. xx

Another couple of favourites, Dolcelatte and Saint Agur!! 😘 eaten until there's none left with a couple of glasses of red - just lovely!

What do they both taste like? I don't think we've had it here as a side dish or used in any meals. :-)

I haven’t tried either Dolcelatte or Cambozole Leah, but Boursin is a soft cheese with added herbs and garlic, extremely yummy. St. Agur is a blue cheese, it’s creamy and tangy. πŸ™‚πŸ˜‹

The Dutch exam is bit lower in saturated fat so should be lower in calories it's not very strong tho and there's cottage cheese I like with pineapple

Not so keen on the texture of the Edam or cottage cheese either. That makes me sound so picky but I’m not really. Tasty breakfast, the tomatoes look lovely. πŸ™‚

I'm picky too I know what you mean it smells too yak like dare I say a man's sweaty socks I guess it's the bacteria πŸ˜‚I actually love smoked cheese even tho that is more of a processed cheese, have you noticed on the dates on cheese it says use within is it 5 daysπŸ€”I don't we'll try not too I get a block about 1.6o it goes green if your fingers touch it so I try and avoid that, we got the tomatoes yesterday up a main shopping area English there nice I had one on way home and remind me of mam's greenhouse ones when I was young shed chop them.up and grate cheese on that's one of my fav snacks not that I do very often, my cholestrol was good 4.3 which surprised me as I been eating cheese sandwhiches more and chocolates I guess it's all the exercise on garden take care and I'll watch out for your meal post πŸ€—πŸ˜ΊπŸ’πŸ§‘

I wouldn’t be able to use cheese that quickly only eating a small amount each day. Cheese goes so well with a lot of things, celery, onion, tomato, cucumber, spinach etc. Even cheesy peas. Your cholesterol is very good, I haven’t had mine done for quite a while. I’ve got an idea for another post, it’s only simple. πŸ™‚

I'll look forward to your post 😁were off for carrots having cauliflower new potatoes spinach and chicken think reason my chol also is low as I'm on HRT and I don't eat meat once in blue moon mam's pie my sister's was 6.2 she eats healthy but eats lamb and beef joints as she is married there both on statins now you should get yours checked πŸ€—πŸ’πŸ˜»

That sounds a very nice dinner Mandy, I know you’ll enjoy it. I don’t eat any meat or chicken so hopefully that will help, but I think some people can do all the right things and still have have a high cholesterol level if it’s genetic. πŸ™‚

Yes it is for some but it gets higher as you get older and if smoke and drinking damages the cells on veins that scuff the cholestrol off and smoking hardens arteries, mam's was 6.5 she eat lamb and chicken legs and put fat of chicken in gravey legs are very high in sat fat, she keeps it to 8g a day now after her heart blocks stress can raise levels too, been thin doesn't mean it's low dad's was over 6 he very thin had stroke at 8o he came off statins for a year and had no exercise think he got clot from laying on settee all day he was very active biker until later life and eat extremely healthy I have good genetics catch up soon πŸ€—πŸ˜πŸ’

Thank you, Sue! Swiss is one of my favorite types of cheese. I always put the Swiss in the middle and use Cheddar and Muenster on both sides so that the mustard doesn’t drip through the bread/holes when eating.πŸ˜€πŸ‘πŸ§€

Hi Leah I love a cheese sandwich and yours sounds perfect. I love lots of cheese but my favourite is mature cheddar which I also find easy to digest as the maturing process breaks down the lactose. πŸ‘πŸ˜Š

Thank you for saying that about my sandwich. I try to have this one 1-2 times a week depending on what else we have in the house and what can be done for a lunch. :-)

Glad to hear that you like mature chedar. I like the mild cheddar and blended cheddar types, too for certain meals. :-)
