Hi everyone. Since it’s still warm here, I wanted to have something cold for dinner. So, it turned out that we had a 7 layer dip with gluten free crackers for myself and my mom had matzah pieces for tortilla chips substitutions because we don’t have any tortilla chips right now. Along with the dip, we both had Mango Greek yogurt for dessert. I had hot tea on the side along with a glass of water. The salsa was mild. Entire meal was 55 total carbs..πŸ˜€πŸ‘πŸ₯πŸ˜πŸ¦

That dip looks like a meal in itself

Thank you! It was really good and it had been a while since we had it for a meal.πŸ˜€πŸ‘

I haven't had that in a very long time

Do you like salsa and green olives?πŸ˜€πŸ‘

β€’ in reply toActivity2004

Separately. Together not so much. Black olives are more to my liking when it comes to 7 layer dip.

That’s good! My mom usually uses black and green olives together in the dip, but we don’t have the black olives right now. Need to get more soon.πŸ˜€πŸ‘

Hopefully the mango yogurt was cooling and refreshing enough to counteract the warm night while eating. Your dip looks stellar

Awe! Thank you! It was really good and helped with the heatwave we’ve had for a few days, now. πŸ˜€πŸ‘πŸ₯

We're on day 2. Unusually warm for june

We're still in the low 70's here. But the hot weather is not far away I fear

Be careful when you’re out and you will get something for meals.πŸ˜€πŸ‘

Careful is the key word. Our local mountain lion has been making the rounds lately. So I don't stray too far away from home. Unless I'm armed.

That’s good! Don’t forget to bring water with you so you can keep cool going back and forth from getting your dinner plans.πŸ˜€πŸ‘

Good to know! Hydration is great in the Summer/hot weather.πŸ˜€πŸ‘

Hi Leah,

That is very creative way to make a healthy 7 layer dip this way. It looks so delicious, mild and light. πŸ˜‹

I love salsa and olives combo in this. Tortilla chips will definitely go perfectly with dip.

Hot tea is what I am having right now too with honey. So soothing.

Thank you for sharing and inspiring us always Leah πŸ˜ŠπŸ™πŸŒΊ

Thank you, Koko! I missed having the dip for a while. It’s a good, cool and quick idea for a meal on a warm day/night. Enjoy!πŸ˜€πŸ‘

You’re welcome Leah. It is definitely quick and healthy meal esp during these summer months. I’m glad you and your mom enjoyed it and probably saved some leftovers for lunch tomorrow. Have a good rest of the evening! πŸ˜πŸ‘

No pressure Leah, I will wait πŸ˜πŸ‘

I think that in the US there are some terrific 'layered' things to eat, and I'd love to know exactly what goes into a 7 layer dip Leah! Sounds so interesting. Glad it all tasted good! We ate out yesterday as we were visiting a little town on the edge of the New Forest (an ancient forest first planted for one of our Kings of long ago to go hunting in!) Now it's a National Park for us all to enjoy. Anyway I digress. There's a very nice fish and chip shop there so we had those al fresco for our main meal, sitting in the town square.

There was cheese, green olives, salsa, guacamole, plain Greek yogurt, etc. (you can add your favorite items) and use either crackers, chips, etc.. Very good!πŸ˜€πŸ‘πŸ₯πŸ¦πŸ˜πŸ₯˜

Perfect, your choice sounds great but I see it's a very versatile thing! πŸ‘πŸ˜ŠπŸ‘

It's really good and a little spicy, but still very tasty and really helpful for warm temperature nights. Next time, I will have to see if I can get blue chips/tortillas and use them, too if we don't have crackers. :-)

Good to ring the changes Leah!

Hi Leah,

Your 7 layer dip sounds delicious with those crackers. Glad you enjoyed it.

Hi Zest ,

Thank you for saying that about the crackers and the dip. It's the first time using them for the dip instead of chips. Both ways are really good! :-)
