Hi everyone I was going to make a stew in my slow cooker but ended up making a nice thick soup. I used sweet potato baby carrots red lentils sprouts peas broccoli spinach mixed diced peppers a little chilli and spices. To thicken I mix a desert spoon of rice flour in some cold water and just add that with some yeast extract.
I enjoyed it and it was very healthy which’s perfect as January is going out in style here as it’s snowing here. So a great reason to be safe and sound at home and enjoy it. 😊

Ooh that looks delicious Jerry, love the ingredients. When I've got more room in my freezer I'm going to make something in my slow cooker.

We had sweet potato mash here this evening along with chicken in white sauce from the store cupboard and tomorrow's lunch will be sweet potato mash along with the leftover veggie haggis from today's lunch.
