A 'quickie' today, a Sweet and Sour, made from a Jar- actually two. I had some Chicken pieces, in the freezer..... First I sharpened my, handy size, Kitchen Knife, I have an old 'Ribbed Sharpener'- I have absolutely know idea how old it is, it was Passed Onto me three years ago- from a friend.
I Bashed Down two smallish onions, whilst I defrosted the chicken- partly in hot water, partly in the microwave. Next I put the onion into my largest Pot and gently fried it- until it was 'Just' browning. I then added the sweet & Sour sauce and brought this up to a simmer. As I did this I chopped the chicken and put it into a 'hot' frying pan. I kept the chicken 'moving' as it Browned, before reducing the heat.
Once the chicken was cooked through I added it into the Sauce, along with some extra boiling water- I didn't actually measure this, just until it 'Looked' right. I put the heat on, medium high, until I had a 'rolling' boil. I left this for, few minutes before reducing the heat, to a simmer. NB Make sure that this is regularly stirred, especially when being heated quickly.
After about twenty minutes I turned off the heat, but continued to stir, the mixture, as it cooled.
I served this with plain Brown Rice.... and Very Good it was too. Even my neighbour agreed. In all a Nice (oh Gawd Andrew 'Nice' Please!) meal.
