Gluten free vegan cauliflower cheese.

Hi everyone,

Here's what I made for dinner tonight it's a cauliflower baked in a chickpea sauce made with onions mushrooms tomatoes garlic cooked in olive oil to soften then a paste made with chickpea flour and cold water was added with the water used to cook the cauliflower. I added black pepper sage sprinkled golden linseeds on top then baked it for about 25mins until golden.

For an even creamier sauce you can use coconut milk, I liked it like this and was interested to try it as I've seen chickpeas used for vegan cheese dishes and I like nice simple food. This is also low carb so ticks a few free from boxes.

I love oven baked food this time of year too. 😊

Thanks Alicia, I'd bought a locally grown cauliflower and was thinking whats for tea and this is what occurred so it was more luck than skill...😁

Well the luck element definitely worked then. I love cauliflower and bought an organic one today and have frozen it ready for Christmas day. :)

Thank you Veeee, all I did was mix a couple of desert spoons of gram flour into a smooth paste and mixed with stock to make the sauce and added that to the baking dish with the cauliflower onions mushrooms and tomatoes and baked.

That sounds interesting and not difficult Jerry, I have no reason to avoid wheat but wonder whether chickpea flour would give more fibre and protein?

Thank you Fran, it is unbelievably easy to make and bake and very tasty. Being a coeliac gram flour is a bonus as its used extensively in vegan baking as an egg replacer.

Gram flour is a great substitute for wheat flour if you are diabetic/pre-diabetic so here's a link about it, they call it garbanzo bean flour in the US:

Is coconut milk ok health wise?

I ask because of the criticism of coconut oil and wondered if the milk has a high saturated fat content which is bad for people like me who’ve had heart issues.

Hi willsie01 I personally like coconut milk but you can use almond milk or any plant based milk I should've made this clear.
