Tried this today, it's pretty nice and plenty healthy.
I don't like prawns so substituted for broccoli and mangetout and added half a tin of tomatoes and half a tin of coconut milk to make it more of a curry than a stir-fry. I used red pepper instead to add a bit of colour and variety.
The rice, of course, can be substituted for cauliflower rice.
Think I'll try this again sometime
