I've never cooked with quinoa before, I was in search of a quick recipe and came across this - youtu.be/rIYqwpgNhu0 I've made something similar before but used couscous the last time.
This time I used plain quinoa, tinned rinsed chickpeas tossed in paprika, carrots, avocado and a tahini dressing made from tahini, lemon, honey, vinegar, water, salt and pepper.
I'm not really feeling the crunch of the carrots (may have been better grated rather than chopped to improve the texture) but other than that, it's a delicious way to eat lots of fresh nutrients.
The ingredients are easily adaptable, it doesn't make much mess, is packed full of goodness and makes for a good meal over the hot summer days.
