Watercress Soup and Rhubarb, for my Neighbour.

Dear 'Foodie' Friends,

I made some Watercress Soup, along with some Stewed Rhubarb, this evening. The rhubarb took Bloomin' Forever, must have been Forty Minutes🤷‍♂️. Anyway I had some myself, yes Delicious- Both of them. I took some down, to my neighbour- Michael likes my Cooking....Well SOMEONE has to! Seriously though he can't really cook himself and the Staff, who assist him (actually do the cooking) haven't time to 'Cook From Scratch'- every time.

The Rhubarb is just cut down, partly pealed and stewed with some sugar- occasionally stirring. The soup is to my usual recipe, which I have 'Published' before. (If anybody wants me, to do so again, just say.)

I have to say, that I AM 'Looking Forward' to making Soups again....when I have Finished the 'Backlog' of Last Years, that is!

I love Rhubarb. But I do not use Sugar but artificial sweetener. Being T1 diabetic. Rhubarb is GOOD for diabetics. The web says so ? Good for you Andrew

Good morning AndrewT well done for making your neighbour some watercress soup and stewed rhubarb I love stewed rhubarb and rhubarb crumbles, it is very sharp so needs sweetening and I use a little unrefined sugar.

I also love soups and especially home made it is also definitely soup weather so I hope that your neighbour appreciated your generosity.

My Lovely Neighbour Michael (Mikey, Mike) Tells me that, my Soups- indeed Most 'Things' I do for / Share with him, are 'Not Too Shabby'- I have to say that I agree.🤣

Mikey is a kind hearted man, with whom, I share a lot of interests. Conveniently we seem to also share a, very similar, taste in food as well....In other words if I 'Like' something, there is a good chance Mike will too.

I will make Mushroom Soup, at some stage, along with Leak & Potato. Kind regards, to all

Update…..I Popped Up, to see Mikey, and asked him about the soup. He, rather 'Sheepishly' replied that he had Forgotten All About it🙄. He is going to Thoughly 'Warm It Through' tomorrow......I NOT holding my breath though🙁🤷‍♂️.

Thank you for reminding me of watercress soup which I love. The best bit about autumn/ winter is being able to make soups that are too hot in the summer! I bet your neighbour enjoyed his 😀
