I have just had, some of, the Lovely Tomato Soup I made yesterday. I used a Huge Tomato, that I was given.
I started by cutting, fairly small, two smallish onions and gently frying them until soft. In the mean time I Skinned, and chopped, one Very large 'Wonky' (actually Many Shaped) Tomato- along with two medium/ large 'normal' ones. I then added all the ingredients to a saucepan, along with about two tablespoons, of ketchup, two teaspoons (or, to taste) of Stock and around One-and a half, Pints of water. (I normally keep the Kettle Hot, for this)
I allowed this to Simmer, DON'T let this 'Go Off' the boil🙈, for about fifteen minutes before Blending. (I have a Stick Blender, which is 'Brilliant' for this.) I added a SMALL amount of white pepper and extra water, as needed, to produce to right consistency. I turned the heat off but left the pan ON the Ring, whilst it cooled. Apart from a bit of Stirring, that was it. I used a Bouillon Stock, because I like it, but any Stock can be used. I froze the remaining Soup, into roughly, Portion sizes.
That's my, fairly simple, recipe....it makes a Lovely Soup. DO try to 'Find' the Wonky/ mis-shapen Fruits (Yes tomatoes ARE Fruits), as they are often Larger, Cheaper, and Riper. Above all enjoy!
