Sprouted Fenugreek (Methi) Seeds Salad - Healthy addition to a Meal

Methi seeds as such have a bitter taste, but once sprouted it tastes yummy. They have a special soluble dietary fibre which lowers the rate of digestion and absorption of dietary carbohydrate which limits the the rise in blood sugar after the meal. Further they have an amino acid called 4-hydroxyisleucine which improves insulin sensitivity.

They are very high in protein which is from plant source, hence suitable for vegetarian and vegans. Sprouting is known to increase the amount of protein and the dietary fibre and thus enhances its nutritional profile further.

Blood sugar response to Sprouted Methi Seeds:

I tested the blood sugar response of Sprouted Methi Seeds and I got the following results:

Quantity: 50 gm raw weight

Preparation: overnight soaking in fresh water at room temperature and after draining the water it took three days to germinate into a tasty sprouts. For blood sugar test, I ate just the sprouts without adding anything.

Blood sugar before eating: 6.1 mmol/L or 109 mg/dL

One hour after eating the sprouts: 6.4 mmol/L or 116 mg/dL

Two hour after eating the sprouts: 5.8 mmol/L or 105 mg/dL

For comparison, my blood sugar peaks up to 11.1 mmol/L (200 mg/dL) on Oat + Wheat Cereal with skimmed milk which used to be my regular breakfast in the distant past.

I have done this test several days and they seem to be consistent.

However, one should note that everyone will respond differently depending on individual condition of the pancreas. For any medical condition or on medications, please consult your Doctor to avoid any undesirable effects.

Hi Praveen55

I used to sprout salads at one time, but haven't done so for a few years - thanks for reminding me of the potential of lovely sprouting seeds. I've not tried fenugreek - does it have an aniseed flavour? I'm not keen on the flavour of aniseed, so just wondering.

I have never used aniseed, Therefore I can not compare the tastes. Sprouted fenugreek seeds have sweet taste with a hint of bitterness. In fact, I was not sure if I would like the taste when I found the raw seeds so bitter. However, sprouting really made it very tasty at least for me.

Thanks Praveen55 - I did google fenugreek after seeing your post, and it also described that the taste was similar to Maple - relatively sweet. Glad to hear that the sprouting procedure helped with the bitterness you'd noticed with the raw seeds. I might get back into doing some sprouted seeds, you've inspired me - I have tried beansprouts, and mustard and cress before, and enjoyed them.

I just been reading up on their nutrition value and I was surprised on how much nutrition they have..would definitely grow them if I find the seeds.

We've been sprouting a variety of seeds in pots for use in salads..but haven't planted any new seeds this week..will get planting first thing tomorrow.

These seeds are used as one of the spices in curry dishes and are readily available, but again it depends on the locations, I suppose.

That is right. One should buy a small pack ( 50 - 100 gm) first. Any Chinese/Indian grocery shop stock this. In the UK, some of the bigger superstores also stock this.
