Leftover chicken.

Zest told me that cooked chicken can be used in a stir fry but it needs to be properly reheated. I simmered it in some chicken stock (made from the chicken carcass and some vegetables) while making the stir fry. I used sesame oil for a change and finished it off with sweet chilli sauce.

I served it with noodles for the carbs. element but it would be good on its own too.

Yes it really was Zest. The Sesame oil made a difference to the flavour, I will be using it again.

Excellent, I shall also try it too - I think the flavour will be really good. Next time I have a stir-fry, I'll hope to try it. :-)

I'm not a chicken / meat eater and certainly you have more experience but i'd say a word of caution. Left over meat is the best culture medium for infective bacteria. Meats best eaten hot and fresh.Heating left over meat can cause spores of botulinum gruops of bacteria to germinate causing lethal Botulism.

Yes, we do need to be careful when reheating meat, I agree with you. The best safeguard is to refrigerate the leftovers immediately, always reheat to boiling point and only do it once.

We are advised not to wash chicken before use and to be very careful about washing hands and utensils after handling. Also, never allow cooked and raw meat to come into contact with each other.
