Hi all. Looking for meal ideas, preferably simple and child friendly.

I'm vegetarian but my husband and children (2 and 6 years old) are not. I'm looking for ideas for healthy meals that all of us will like. My family don't mind eating meat substitutes and cooking a batch then adding meat/substitutes after isn't a problem either.

Please help with some inspiration!

Hi there and welcome to our friendly forum, you’re in great compnay on here for healthy eating recipes and ideas, we have a vegetarian and a vegan Topics as well as many others. And you can use the search box top right for specific recipes.

In my opinion there is nothing more satisfying in Winter than a stew made of vegetables and legumes. An easy start in a v.large pan is water, red lentils, garlic, onions, root veg and some dark leafy greens. A bouillon powder & black pepper for lots of flavour. Dried lentils can be chucked straight in the pan with water and should be enough to cover the bottom - if you want a thick consistency then build a pyramid. Ensure you stir as the lentils absorb water, keep on adding water as you add vegetables. Any veg will do, whatever your family likes. Serve with rice or pasta, cous-cous etc. These can be added to the main pan, if you want a single pan solution. If you leave the final mixture runny then people can dip bread/toast in.

If you have left overs then you can freeze or chill in portion sizes for future meals at work, school etc. This kind of meal can be cooked with infinite variety. If you have some veggie sausages these could be chopped and added. If you have quorn or veggie mince that could be added.

It's minimum effort - you can even use frozen tinned veg if you want. Washing is just one pan, and if your dish has no oil (not necessary anyway) then washing up is almost a rinse and also it is ultra-slimming no matter how much you eat.

The golden rule is don't stint on flavour. You know when you have enough flavour when you taste it while cooking and want another taste, just to double check!

What about pasta?

The point is, that you can prepare it with diff kinds of veggies or add spices depending on your taste and preferences.

Pesto pasta and one with shrimps are my favourite.
