Just to add to the healthy soup recipes which I love this time of year, actually I love them most times of the year. I've had a lot going on so just popped into a local supermarket and bought a pack of fresh mixed veg with bok choi mini corn cobs hot chilli tender stem broccoli sugar snaps, I gently cooked a white onion with the chilli in a little olive oil until soft added the mixed veg chopped kale vine tomatoes with some vegetable stock, I added ginger turmeric black pepper and a little sea salt, then thickened with some ground golden linseed and chia seeds. The linseed I grind myself in a coffee grinder, this is a really easy and healthy way to thicken a soup and keep it gluten free and plant based. So its free from and healthy.
I had it with some home made gf bread toasted and I added ground linseed and chia seeds to the GF mix. π
Wow, this looks like a very Healthy Soup - I love the spices and I am interested to see how you did your vegetable stock - really good - I will try that when I do a vegetable soup next time - and I have some brown linseed - and a coffee grinder, so I can try out your method of grinding it. Good idea! I have done that with mixed seeds before - it works very well.
Your homemade bread looks lovely. I bet it was all delicious.
