Have you tried including home made vegetable soup in your weekly eating plan. It is quick to make and very easy. You can use whatever veg you have in. I use a a combination of whatever root veg and other veg I have in .E.g. Carrots , cauliflower, peas , cherry tomatoes etc I have and a small potato or Passat a to thicken it. I cook the diced veg in a dash of olive oil to soften them and season to taste. Then cover the veg with water/stock then add 2/3 cup of Passat a if I feel like a tomato based soup. Then I bring it to the boil and simmer for 15 to 20 minutes or until the vegetables are tender. ? I added a dash of Worcester sauce and red wine vinegar. You can sprinkle in whatever herbs you like or a dash of your favourite spices. I sometimes use a stick blender to make a smoother soup . You can choose whatever texture you like.
It is easy , quick healthy and low calorie . You control the carbs used and veg are naturally gluten free. So that is a win win. You can go low tech with a potato masher if you don't have a blender or stick blender.?
