I made these with 50g ground almonds, 150g gf plain flour, 100g Pure dairy free, 50g golden granulated sugar and 1 tea spoon of xanthan gum.
I've the builders coming in soon so want to be stocked up with gluten free goodies and I love biscuits like this with fruit and ice cream especially this weather...π
Lucky builders! I could have done with one (or two) of your biscuits today! When I get my new house straight I am going to be making some gf biscuits. My xantham gum came today. Can you taste it in baking?
Hi Ali thanks, And no I can't taste it, if you use too much it can make a biscuit chewy rather than short so its important not to over do it. 1 tea spoon per 250g is the recommended max and I often use half of that as I use ground chia seeds which also help bind gf flour.
You'll be a whiz at baking gf biscuits in your new home, I'll bet...π
