Here’s a picture of tonight’s dinner out with my brother and his family as a belated birthday celebration with Mexican food. It was really great to see the kids and my brother with his wife (our parents were on their own). After dinner, we went to get coffee. Everyone had a fantastic time!😀👍

Hi Leah, this looks a really fantastic and delicious to me so what a birthday feast, lots of Mexican dishes appeal to me as I really like spicy peppery food with corn tortilla's and I've always fancied Enfrijoladas.

So I'm so glad that you enjoyed your birthday treat and as I know that it will be gluten free it appeals to me...😊

You were right! The enchiladas were corn-based wrapped. You will like them with the Mexican rice and beans with guacamole.
