Here's what I had for lunch today, I made some GF bread and while that was proving I made some shortbread biscuits with pureed apple and dates instead of sugar and I had it with some fruit and coconut cream.
The shortbreads I made with quinoa flour ground chia seeds and 1/2 gluten free flour mix and I used goats butter as that has a lower melting point and makes the biscuits 'shorter' with one egg and the pureed fruit.
Your meal looks lovely - very colourful. Your shortbread biscuits sound really tasty, and I think it's great that you made them with pureed apple and dates instead of sugar - I'm glad you included the recipe for how to make those, as I may give them a go.
Thank you Zest, I tried it after reading that you can buy date sugar, so thought I'd try using some pureed dates and apples and it worked, so I'm definitely going to buy some date sugar now. π
