Gluten free Easter biscuits with ground quinoa.

Hi everyone,

I decided to make myself some of these for Easter as I haven’t ventured into a supermarket so haven’t bought any hot cross buns this year.

I ground some quinoa into a coarse flour and used 75g with 140g plain gluten free flour 1 egg 110g of butter 110g mixed dried fruit with peel 1/2 tea spoon mixed slice and a little milk to make into a dough with flakes almonds for the topping. They were tray baked for around 25mins 160C until cooked through.

I often make biscuits with dried fruit and spices so I do like Easter biscuits.

Tomorrow evening at sundown is the last night/day. It's going better this year. Today, we will have leftover chopped liver with matzah and a few other items for lunch. :-)

You're welcome! They will definitely go well with a few meals that I have in mind coming up after Sunday. :-)

It's part of what happened in Egypt when Pharaoh wouldn't let the Jews leave. They didn't have time to let the bread bake so they took it on their backs and it turned into crackers that weren't leavened. They call it matzah. :-)

The other thinking is, some people may be allergic to some of the grains/ingredients, but they never mention it in the story read each year for Passover. :-) They have gluten free matzah for those who don't eat gluten.

That's right-- unless the ingredients/bold type says 'kosher for Passover' on the label. :-)

We've got a very quiet Easter Sunday as our son is working so I think after my dog walk, I will be in the kitchen baking delicious biscuits! Thanks Jerry
