Hi everyone, I make all my own bread and having the smell of fresh bread baking is great, I often eat fruit cakes but thought I'd make some fruit bread and I add very little sugar to it.
One really good tip if you want to make something appear sweeter is to add a teaspoon of brown sugar and spices to the dried fruit and leave it to soak. This gives the fruit extra flavour makes it softer and because its slightly sweeter we miss that there's no extra sugar in the fruit bread.
I made 2 small fruit loaves and 2 fruit buns so will pop some in the freezer and I'm about to go and test my kettle and the fruit bread...π
Hey Jerry ... I want to visit you next time you bake some of that fruit bread ! ha, just kidding

Gluten free and your idea for making it sweeter is Excellent ! I can really appreciate how good the bread smells when baking it, too.
I've been put off from doing the yeasty bread thing and i think if it is gluten then you miss that part, yes ?

Hi RealEyes, thank you, I use yeast here is my bread recipe I just add a teaspoon of brown sugar to the sultanas and leave them to soak in boiling water, so maybe you could make it with baking powder And Iim sorry about the delay, π

Am i correct in assuming that your reply to Debs about 'arrowroot' is the replacement for using yeast in the recipe (I have yet to check out that link you sent Debs)?
+ While I am here ... do you have any suggestions on how to address my Unwillingness to bake n cook for myself ? In living alone i find it very challenging to give myself that gift of sharing and the making of good food for myself ...

Hi there, when baking gluten free bread, you have to replicate the gluten which is a long chain molecule thatβs very elastic so it binds bread brilliantly and strong bread flour contains over 10% gluten, so with GF bread we add gums like xanthin gum, guar gum psyllium husk and egg whites and then milk to give it protein. So vegan gluten free bread needs a binding flour like arrowroot so you can use plenty.
Now your other question about motivating your self is interesting and you want to realise that βyouβre worth itβ so cook something special that you like. As you have the opportunity to cook whatever you choose with out thinking of any one else.
