I bake Rye bread using sour dough starter. Definitely much healthier than any bread from supermarkets. Just one slice for breakfast keeps me going much longer. Will post photos when next batch comes out of the oven.

Agree. Hurrah for sourdough. I mked a good one with Enkorn and Emmer flours ( old wheat varieties) mixed with unbleached organic white. Fabulous. Must try rye though. Do you use all rye ? Must be very dense.
That reminds me, must go and put the starter on the beginning g of its 2 day activation .

I'm lost without bread at lunchtimes, what do you eat instead that you can eat at home as well as make up and pack for a day out?
I know where you are coming from - it is so easy to make a sandwich for lunch . I have stopped completely using white bread and only use Low GI bread - but lately I have been making bowls of savoury oats for lunch ( and breakfast sometimes) . Look up savoury oats recipes on the internet - lots of recipes.
It is far too easy. I don't mind the sandwiches when I'm out and about i.e. going out for the day as they are much easier to transport but I certainly don't want to be eating them at home every day.
The oats sound lovely and I will have a look at the recipes. I eat porridge most days for breakfast and absolutely love oats but I have to say the better the bread I enjoy it more - the only white bread I like is French stick, who doesn't, and sourdough. I make my own often and I love seeded bread and I am looking at making some bread using spelt but I need to look into that more.
Do also try to make bread out of buckwheat. It's a very tasty and bread-like alternative to regular wheat flour. It's also gluten free and buckwheat is naturally very good for diabetics.
I don't eat bread at all. Bread is just a learned habit. I know how hard it can be to eat without bread at first but focus more on eating actual food rather than relying on a baked flour item to fill yourself up. Instead of bread eat meat, salad, cheese, oil, sprinkled with seeds and nuts. For dessert chuck out your pastries and smear some peanut butter or raw cacao onto a piece of fruit - delicious.
YouTube is full of keto bread recipes. You can also look online for a brand of bread that claims to be low carb. I know of one here in Australia which is only 1.5g of carbs per serving (2 slices) -its made mostly of milk protein and seeds. Very nice as well.
No I'm not diabetic but have IBS and will be following the low FODMAP diet when I return from holiday, I am away for 2 weeks soon as don't want to have to constantly think what to eat whilst I am away. I have cut Lactose out of my diet so that has made quite a difference so I am still eating bread at the moment but wanted ideas on what to eat at lunchtimes whilst following the low FODMAP diet. I also need to lose about 9 lbs as I am normally 9 stone but am 9st 9lbs at the moment and I know that's because I've not been exercising as much due to a damaged knee.
Also, I was looking for something that was filling so that I don't pick and the Rye bread you make sounds good for keeping you going for longer. What I would like to know is does it taste different to the shop bought Rye Bread as I don't like the one you get in the shops?

Thank you Champak, I'll have to omit the onions and garlic as I have IBS and will omit the olives, unfortunately I do not like them. I will have a look at the LCHF for recipes.
